Ragnatele Amarena e Cioccolato

Non c'è niente di meglio di una bella ragnatela per creare l'atmosfera di Halloween perfetta!
Scheletri, fantasmi e streghette stanno per invadere le nostre strade, Halloween ormai è alle porte,  geograficamente parlando, le porte Italiane le ha varcate da un bel pezzo, ed ogni anno sempre più persone festeggiano, perciò mettete sul fuoco i pentoloni, datevi alle lunghe cotture, magari per cena preparate un succulento  stracotto al vino rosso e patate e mettetevi comodi ad ascolate la leggenda di Jack.....
Non so se fate parte di quella categoria di perosne che repellono questa festa, sinceramente l'ho sempre festeggiata, nello stesso modo in cui festeggio la candelora, il calendimaggio, i solstizi e gli equinozi...

La leggenda di Jack-o'-lantern

C'era una volta, nella lontana e fredda terra d'Irlanda, un fabbro di nome Jack.
Jack non era di certo una di quelle persone che si possono definire affidabile, era un grande ubriacone taccagno ed avaro.
Una ventosa notte di fine Ottobre, proprio nella notte di Halloween, si imbattè nel Diavolo che stava sorseggiando una birra in un pub.
Il Diavolo tese a Jack un tranello, e l'avaro Jack stava quasi per cadere nelle tra le malefiche grinfie del Diavolo, ma fu più furbo di lui, e badate bene, non è facile ingannare il Diavolo...
Jack riuscì ad imbrogliarlo facendogli credere che gli avrebbe venduto l'anima in cambio di un’ultima bevuta.
Il Diavolo, così, si trasformò in una monetina per pagare l’oste e Jack fu così veloce da riuscire ad intascarsela.
In tasca Jack aveva anche una croce , e fu per questo che il Diavolo non riuscì più a ritrasformarsi ed a tornare alla sua forma.
Jack, allora, stipulò un nuovo patto col Diavolo, e lo lasciò andare a patto che, per almeno 10 anni, non fosse tornato a reclamare la sua anima, Il Diavolo meditò ed accettò.
Dieci anni dopo, Diavolo andò a cercare Jack, che anche questa volta fu astuto come una volpe, e con uno stratagemma, riuscì a far  promettere al Diavolo che non lo avrebbe cercato mai più.

Quando Jack morì, fu costretto a bussare alle Porte dell’Inferno; il Diavolo, però, gli disse che non poteva entrare, e quando Jack disse che fuori era buio e freddo, il Diavolo gli lasciò un tizzone ardente. Jack lo usò per ritrovare la strada del ritorno, e per non farlo spegnere con il vento, lo mise sotto una rapa che aveva con se.

Ancora oggi Jack vaga nella notte con la sua lanterna, da qui il nome "Jack O' Lantern).

Oggi una ricetta iper- facile, e di sicuro effetto per Halloween!
Vi serviranno giusto 3 ingredienti!

100 g di zucchero
5 gocce di essenza all'amarena Flavouart
Chocaviar Venchi

Aromatizzate lo zucchero con l'essenza all'amarena.
A questo punto il più è fatto, vi occorrerà una macchina per lo zucchero filato, io ho la splendida "Cotton Candy" della Princess, è fantastica, Keira la adora, organizziamo sempre tante festicciole con le sue amiche, ed ogni volta prepariamo lo zucchero filato, un successone ogni volta!
Comunque, non vi resterà che preparare lo zucchero filato e servirlo con piccole pepite di cioccolato fondente!

Dita di Strega ed Impronte del Diavolo (La Leggenda) Per un Halloween da Paura

Pisa è una città davvero meravigliosa, basta alzare lo sguardo per ammirare le facciate degli splendidi palazzi che costeggiano i vicoli.
E' una città affascinante, ricca di storia, di monumenti, di miti e di leggende...
Quando ero piccola andavo spesso a Pisa con la mia mamma, ed ogni volta volevo andare a contare le impronte del Diavolo.


Con il passare degli anni questa abitudine mi è rimasta, ed ogni volta che vado a Pisa, che è veramente a due passi da qui (da casa mia si vede la Torre, piccina piccò ma si vede in lontananza) vado a vederla.
Giusto ieri ero a Pisa, ed ho pensato di fotografarle per voi, e visto che Halloween si avvicina, raccontarvi la loro Leggenda...

Correva l'anno 1063 quando fu posata la prima pietra del Duomo di Pisa, all'epoca la città era così potente che decisero di erigere la chiesa in un'area esterna alla cinta muraria altomedioevale, così che fosse noto a tutti il potere che la città aveva, perchè Pisa non necessitava protezioni, non temeva niente e nessuno.
Per costruire questa maestosa meraviglia vennero importati prestigiosi marmi Romani, fu affrescata e lavorata come se fosse un opera del cielo, ma il Diavolo osservava furibondo ed invidioso...
Così una sera, dopo aver svolto il suo lavoro al Campo Santo, si mise in testa di scalare il Duomo, ergersi su di esso e poi distruggerlo.
Sguainò i suoi artigli e corse in direzione del lato Nord, tentò di arrampicarsi, ma il suo tentativo fu vano, riuscì a scalare giusto un paio di metri e poi cadde giù, era così infuriato che i suoi artigli lasciarono il segno, e sono visibili anche oggi.


In Toscana conosciamo bene questa leggenda, a volte capita di vedere una fila di persone davanti a questi segni lasciati sul marmo, perchè fin da bambini ci insegnano che queste impronte sono magiche...
E si, hanno una particolarità, il numero delle unghiate cambia per dispetto ogni volta che si prova a contarle.
Sono circa 150, e potete contarle quante volte volete, ma il risultato della conta sarà ogni volta differente....

Rimaniamo in tema con una ricettina perfetta per Halloween?

Dita di Strega




300 gr di farina
150 gr di zucchero
170 gr di burro morbido
1 uovo e 1 tuorlo
la scorza grattugiata di un limone (io uso quelli del giardino ihhihi)
semi di una bacca di vaniglia

Disponete a fontana su un piano la farina con lo zucchero, disponete al centro gli altri ingredienti ed impastate "con tanto amore" per qualche minuto,
se volete un impasto colorato questo è il momento di aggiungere il colorante alimentare in gel. Avvolgete nella velina e fate riposare 30 minuti in frigo.
Create dei rotolini, rigateli con il coltello e disponete una mandorla ad una estremità per creare l'unghia,  infornate a 180° per 20 minuti.Una volta sornati potrete intingere l'estremità senza mandorla nella glassa rossa, per un effetto ancora più "da paura".

La Meringa Francese

Halloween si avvicina, io e Keira Yamila stiamo decorando casa, lei ovviamente si diverte un sacco, tra ragnatele finte, fantasmini che si illuminano al buio (abbiamo fatto anche il video per farvi vedere come si costruiscono), e Benjamyn, il nostro gattone nero che è entrato nella scatola delle decorazioni, tra zucchette e streghette, evidentemente era a proprio agio...
Ma io mica son qui a dirvi come confezionare fantasmini da appendere, bèh, si, anche quelli, ma a quello ci pensa Keira, io son qui a darvi qualche idea per addobbare, più che le vostre case, le vostre tavole per Halloween.
 Oggi vi farò vedere come, con pochi ingredienti ed un'pò di fantasia, è possibile trasformare un classico dolcetto, un un paurosissimo fantasmino, e già che ci sono, vi svelerò i magici e misteriosi trucchi per ottenere meringhe sempre perfette, perchè per fare i fantasmini basta guardare una foto ed armarsi di sac a poche, ma per ottenere meringhe perfette ci sono dei piccoli trucchetti da seguire....


Sugli albumi c’è tanto da sapere: ad esempio, che l'albume ha proprietà emulsionanti, contenute all’interno delle sue proteine; queste si legano all’acqua in esso contenuta e, sbattute, si gonfiano: otteniamo così gli albumi montati a neve.
A questo punto potrei dirvi che nell’albume sono contenute così tante proteine che ci permetterebbero di montare a neve l’albume stesso e di triplicarne il volume semplicemente aggiungendo dell’acqua (solitamente il rapporto albume/acqua deve essere di 100 g per 60 ml); il prodotto, però, sarà instabile, cioè si smonterà molto velocemente. 
Vi consiglio quindi di usare questo trucco solo se utilizzate immediatamente la chiara montata.

Il secondo trucchetto da sapere è che più le uova sono fresche, più la schiuma che otterremo sarà stabile; tuttavia, sarà anche più difficile da montare.

Terzo: è bene che negli albumi da montare a neve non vi sia la minima traccia di tuorlo, perché questo contiene dei grassi che non permettono all’albume di montare.

Quarto: se portate gli albumi a temperatura ambiente si monteranno più velocemente e più facilmente. 
E infine, è preferibile non montare gli albumi in contenitori di plastica: se non avete alternativa assicuratevi che il contenitore in plastica sia ben asciutto e pulito.
Passiamo alle meringhe. Il procedimento per farle è decisamente lungo; le meringhe infatti non devono cuocersi, ma seccarsi. 
Non sempre vengono perfette, c’è chi dà la colpa al forno e chi al tempo, ma in realtà ci sono dei trucchi per ottenere meringhe sempre perfette. 

Aggiungete sempre un pizzico di cremor tartaro, che stabilizzerà la vostra neve di albumi e la farà smontare molto più lentamente.
Potete usare questo trucco anche quando montate gli albumi da aggiungere all’impasto di una torta, come l’Angel Food Cake e la Chiffon Cake, due torte americane caratterizzate da una morbidezza impressionante; sarà più facile amalgamarli alle polveri dell’impasto.

Aggiungere agli albumi aceto di vino bianco mentre li si monta a neve ci permetterà di ottenere meringhe particolarmente lucide, mentre l'aggiunta di amidi farà tenere meglio alle meringhe la forma mentre saranno in forno a seccarsi. Anche la classica aggiunta di succo di limone può aiutarci a montare bene gli albumi, e renderà le meringhe più bianche.

Più zucchero mettiamo e più le meringhe verranno compatte; meno zucchero mettiamo, più il cuore della meringa resterà cremoso. 
Se preferite una meringa non eccessivamente dolce, ma asciutta e croccante, potete sostituire parte dello zucchero con la maizena, il risultato è assicurato!
Tutti sappiamo che quando sbattiamo l’albume vi incorporiamo aria. 
Così facendo, otteniamo la classica consistenza spumosa. Lo zucchero poi la stabilizza, e basta pochissimo per rovinare tutto: basta che l’albume montato venga in contatto con della materia grassa e la magia finisce… 


Altro utilissimo consiglio: rivestite sempre la placca del forno, ma non con i tappetini di silicone, che favoriscono la formazione dell’umidità e compromettono il risultato finale. 
Usate invece della comunissima carta da forno.

Meringa francese

Esistono vari tipi di meringa. Questa è la ricetta della meringa francese, di gran lunga più semplice da realizzare rispetto alla meringa italiana.
Si utilizzano aceto bianco e maizena, quindi non è necessario aggiungere il cremor tartaro; tuttavia, se volete aggiungerlo, male non fa: stabilizzerà ancora di più gli albumi montati a neve.

Per 20 meringhe medie

4 albumi 
225 g di zucchero 
½ cucchiaio di aceto di vino bianco 
1 cucchiaio di maizena

Sentieri D'Autunno


Vi siete mai chiesti come nasce una ricetta?
Io si, me lo chiedo spesso, tuttavia, è una domanda che mi pongo soltanto quando mi trovo davanti a ricette della tradizione, o cumunque, ricette che alle spalle hanno un determinato numero di anni, ed allora li, mi piace risalire al periodo storico nella quale sono nate, per inserirle in un contesto, e da li posso risalire a tutto, o quasi, se ad esempio ì, suddetta ricetta è nata in un paese di mare, o se ha avuto influenze straniere, basti pensare all'uso delle spezie, che in cucina denota un contatto con altre culture, e da vita a cucine spettacoli, speziate, un crogiolo di conoscenze e sapori, come la cucina Cajun.

Se lo chiedete a me però, come nascono le mie ricette, quelle un'pò più complicate della classica insalata di farro e gamberetti   saprò darvi sempre e solo un'unica risposta: dai sogni, dai ricordi, dalle emozioni...

Perchè io sono così, prima mi immagino la ricetta finita, mi viene in mente come un lampo, dal niente, sfocata, ma è li, come se ci fosse sempre stata, e ne sento il profumo, e piano piano, come in una caccia al tesoro, cerco di scoprirne gli ingredienti, ecco come nascono le mie ricette.
Non ci vuole molto dunque, per capire a cosa mi sono ispirata per la ricetta di oggi...

Volevo creare un piatto che già solo al primo sguardo rievocasse i ricordi di una passeggiata in montagna;
il terriccio umido, le foglie bagnate, la rugiada che imperla il muschio, i frutti che la terra ci dona in questa stagione: funghi e castagne.

Quando ero piccola adoravo l'autunno, continuo ad adorarlo anche adesso, in verità è la mia stagione preferita, quando la luce del sole si fa più calda e dorata, quando ancora l'aria è tiepida ma c'è odore di legna bruciata e di nebbia.
Quando la mattina ai margini del bosco, il terriccio si fa scuro, le foglie creano distese multicolori ed i funghi fanno capolino, quando i ricci delle castagne iniziano a cadere.

Mi mancano le lunghe passeggiate nel bosco, mi manca andare con mio nonno per i sentieri "della macchia", a scovare impronte di volpi e cinghiali, a scoprire i segni di un passato che sembra lontano, fatto di trincee scavate in terra e case abbandonate che ancora la vegetazione non ha coperto.
Amavo quei pomeriggi fatti di stivaletti di gomma, trecce troppo lunghe, guance arrosate, profumo di muschio e terra bagnata, cestini di vimini e foglie collezionate.
Raccoglievo piume, studiavo orme, collezzionavo foglie, cercavo funghi.
Ed alla fine, prima che il sole calasse, quando la luna era così alta in cielo, e così splendente da sembrare irreale e magica, quando ancora si udivano nitidi i cinguettii degli uccelli disturbati dalla nostra presenza, ci fermavamo al fiume, ammiravamo il tramonto, e riprendevamo la via di casa, con i cestini colmi di funghi e castagne.

Ho imparao ad associare l'autunno ai colori caldi ed all'amore della famiglia, al caldo del focolare, al riunirsi a cena, a tavola la sera, tutti insieme, con le caldarroste sul fuoco che scoppiettano in una padella che ha più anni di me, con qualche punto di troppo di ruggine ed il manico di legno che sfida il tempo.
Tutti insieme, intorno a quella grande tavola rotonda di legno lucido, che quando ero bambina mi sembrava grande quanto il mondo, a mangiare castagne, pane di campagna, il formaggio del contadino con il latte appena munto, ed i funghi raccolti, magari fritti, croccanti, bollenti e dorati, panati in scoppiettante farina di mais.

Le risate di nonna, le mani forti di nonno, mamma che rientrava a casa da lavoro con le prime gocce di pioggia che le imperlavano i capelli troppo ricci, le goccioline argentate sul cappotto nero, la stufina per scaldarsi la sera, ecco perchè amo l'autunno, perchè ogni volta che è nell'aria, io vengo catapultata indietro nel tempo.

La mia passeggiata tra i sentieri del bosco, questa volta, è proprio il caso di dirlo, è per me una psseggiata lungo il viale dei ricordi...

Ho voluto fondere i profumi, le immagini ed i sapori dei miei ricordi; il risultato che ho ottenuto è praticamente identico a quello che avevo immaginato, e per questa volta vi farò letteralmente entrare nel mio mondo e vi mostrerò il primo passo di ogni mia ricetta, ovvero, invece di finire nel piatto, finisce prima su carta, li inizia a prender vita, comincio ad apportare le prime modifiche, a riflettere sugli abbinamenti, sulle consistenze, inizio a togliere o ad aggiungere...

Iniziamo a descrivere la ricetta:

La Base: Alla base un purè vellutato e spumoso di patate di montagna, il purè ha di per se il sapore dell'infazia, della coccola, ma io volevo renderlo ancora più coccoloso, avvolgente e ricco, per questo l'ho arricchito con piccoli cubetti di castagna al finocchietto, letteralmente fondenti al palato, perchè si sciolgono in bocca, ma questa piccola variazione non mi bastava, volevo aggiungere qualcosa che avrebbe reso il mio purè una vera e propria goduria.
Non c'è bisogno che ve lo dica io, lo saprete già benissimo da soli, che l'aggiunta di formaggio rende il purè una vera e propria esperienza imperdibile, sopratutto se suddetta ricetta è stata realizzata con latte fresco di prima qualità ed un Signor formaggio che rende il purè quasi filante...
Avevo a disposizione due tipi di formaggio di ottima qualità, Gruyère DOP ed Emmentaler DOP, entrambi ci sarebbero stati più che bene, ed ero abbastanza indecisa su quale utilizzare, così mi sono data all'assaggio, Keira mi ha aiutata in questo arduo compito.
Entrambi sanno di latte fresco e sono dannatamente buoni, Keira, dall'alto dei suoi sette anni, ha una gran passione per i formaggi, ed un debole per l'Emmentaler, quello con i buchi insomma, che al contrario del Gruyère presenta un gusto leggermente più secco ed amarognolo, con sentori di frutta secca, non a caso lo adoriamo addolcito con un filo di miele; io invece, che di solio prediligo formaggi dal gusto deciso, ho adorato il Gruyèere dal primo morso, il suo sapore è più dolce, delicato e gentile, la sua consistenza quasi vellutata, saporito al punto giusto con un retrogusto di pascoli e fieno che ti fa sentire subito in un sogno, esattamente ciò di cui avevo bisogno!

La "Terra": Dato che volevo che questo piatto, anche al primo impatto, evoasse immagini d'autunno e di sentieri boscosi, ho deciso di realizzarlo in maniera un'pò particolare, creando un piccolo bosco in miniatura, ho ricoperto il delicato purè con uno strato di briciole croccanti di farina di castagne, e "sassolini" della consistenza delle meringhe, di Tapenade.

La Castagna ed il suo riccio: Ho crearo due semisfere di frolla salata di sola farina di castagne ricoperte di rosmarino, la loro forma particolare le rende perfette per fare "scarpetta" e creare un gustoso crostino, al loro interno due morbide castagne bollite al finocchietto, le stesse utilizate per arricchire il purè.

I funghi e la Rugiada: Non è un vero bosco se non c'è rugiada, e qulache fungo che spunta qua e la, ed ecco che nel piatto compaiono succosi pioppini confit, croccanti, saporiti e sugosi, un piacevole contrasto con le briciole croccanti di farina di castagne ed il morbido e vellutato purè.
Ho voluto aggiungere il finocchietto selvatico, perchè dalle mie parti le castagne si fanno con il finocchietto, e si sposa perfettamente sia con i funghi, sia con le castagne che con le patate.
Qualche foglia di barbabietola, per accentuare il sapore terroso dei funghi ed infine, a coronare il tutto, piccole gocce lucenti di rugiada.
Cosa sarà mai questa rugiada?
Semplicissimo, piccole sfere al sapore di tartufo, che vanno ad impreziosire il piatto, donando un leggero e piacevole retrogusto di tartufo.

Si, lo so, sembra complicato, ma è più complicato spiegarlo, fidatevi.
Le perle si possono preparare con ore di anticipo, idem per la frolla, le castagne bollite, i funghi confit e la tapenade croccante.
Alla fine, la cosa più noiosa e difficile da preparare sarà la frolla di castagne.
Una volta pronti tutti gli ingredienti (al massimo 40 minuti tra impasto e cottura di tutto) dovrete solo assemblare il piatto e servire, niente di più semplice, fidatevi!
Ed ora ecco la ricetta, vi scriverò in ordine le preparazioni che è meglio eseguire prima.

Sentieri D'Autunno
Per due persone 


  
Per la Frolla di Castagne
(Gluten Free)



200 g farina di castagne
30 g di burro freddo
1 presa di sale
1 tuorlo

Unite tutti gli ingredienti nel robot a lame, azionate fino ad ottenere una palletta d'impasto omogenea, quindi stendete l'impasto in uno stampo di silicone (semi sfere piccole) e fate cuocere in forno preriscaldato a 180° per 25 minuti.
Tenete da parte 4 gusci per formare le castagne, il resto della frolla frullatelo con il robot a lame fino ad ottenere delle briciole.
Potete realizzare questo composto anche con un giorno d'anticipo, in questo caso sarà necessario conservare i gusci e le briciole in un contenitore ben chiuso, al riparo dall'umidità.

Per la Tapenade Croccante


50 g di olive nere denocciolate
5 g di capperi
2 filetti di acciughe

olio extravergine q.b

3 cucchiai di farina di Tapioca

Unite tutti gli ingredienti tranne la farina di Tapioca, e frullate fino ad ottenere un pesto liscio e senza grumi.
A questo punto unite anche la farina di Tapioca e frullate ancora fino ad ottenere un composto di briciole grossolane, che farete asciugare in una padella antiaderente per circa 7 minuti a fuoco basso.
Anche questo composto può essere realizzato con un giorno d'anticipo, l'importante, come per la froll, è conservare le briciole in un contenitore ben chiuso.

Per i pioppini confit



una manciata di pioppini
1 presa di sale
olio extra vergine d'oliva

In un pentolino alto e stretto unite i funghi ed il sale, coprite completamente con l'olio e trasferite su una fiamma bassissima, quando inizierà a fare le bollicine spegnete e lasciate da parte.

Per le Castagne bollite


400 g di castagne
1 ciuffo di fiori e foglie di finocchietto selvatico
sale

Incidete, con un coltello ben affilato, la pancia delle castagne, trasferitele in una pentola, copritele d'acqua, unite il finocchietto e portate a cottura.
Sgusciatele e tenetene da parte 4 per riempire i gusci di frolla, il resto andrà tritato ed unito al purè.

Per le gocce di Rugiada al Tartufo


100 ml di brodo di verdura
4 gocce di essenza al tartufo
1 g di agar agar

Prima di cominciare riempite un bicchiere di vetro con olio di semi di girasole e dimenticatelo in congelatore.
Unite l'agar agar al brodo, aggiungete l'essenza la tartufo, portate ad ebollizione, fate bollire un paio di minuti, quindi spegnete, fate intiepidire leggermente e riempite la siringa.
Togliete dal congelatore il bicchiere pieno d'olio, e fatevi cadere dentro tante piccole gocce.
Con un colino a maglie fitte poi, lavatele sotto l'acqua corrente ben fredda.

Per il Purè di Patate e Castagne al Gruyère


400 g dipatate bollite
300 ml di latte fresco intero
30 g di burro d'alpeggio
sale e pepe q.b
150 g di Gruyère grattugiato

Schiacciate le patate ed unitele con tutti gli altri ingredienti dentro un pentolino, fate cuocere, mescolando, a fuoco lento, fino a che non otterrete un composto denso.
Tritate le castagne precedentemente bollite, tritatele per bene

Componiamo il piatto

Disponete il purè alla base, spolveratelo con le briciole di frolla di castagne e con la tapenade croccante.
Disponete i gusci di castagna, farciteli con due castagnette bollite.
Unite qualche ciuffetto di finocchietto selvatico e qualche fogliolina di barbabietola, ultimate unendo i pioppini confit e le gocce di rugiada.

I wanted to create a dish that already only at first glance rievocasse memories of a walk in the mountains;

I have two types of cheese of excellent quality, Gruyère and Emmentaler AOC AOC, we both would have been just fine, and I was quite undecided about which one to use, so I gave myself tasting, Keira helped me in this arduous task.

On Autumn Trails

For the shortcrust Chestnut
(Gluten Free)
For two people

200 g chestnut flour
30 g of cold butter
1 pinch of salt
1 egg yolk

Combine all the ingredients in the mixer blades, driven to obtain a homogeneous mixture of palletta, then roll out the dough into a mold of silicone (semi small balls) and bake in a preheated oven at 180 degrees for 25 minutes.

For the Crispy Tapenade

50 g pitted black olives
5 g of capers
2 anchovy fillets

Pioppini confit

a handful of pioppini
1 pinch of salt
extra virgin olive oil

400 g of chestnuts

100 ml vegetable stock
4 drops of truffle essence
1 g of agar agar

L'aperitivo Gluten Free

BIn diretta dal letto di casa mia, e molto poco pimpante, fuori il sole splende, ed io sono bloccata a letto.
Non molti di voi sanno che ogni tanto mi blocco totalmente, divento tipo un tronco di legno, e mi muovo come un personaggio uscito dal film "L'esorcista" , questo è poco carino, lo so, ma purtroppo a volte capita, non sappiamo bene perchè, non sappiamo bene come, anche perchè, come diceva mia nonna parlando di dottori: "é bravo chi ci indovina" e per adesso nessuno ha ancora indovinato bene...

Perciò tutti i programmi di oggi sono saltati, non mi sono potuta svegliare presto per andare a comprare castagne e pioppini, che, a proposito, mi serviranno per la prossima ricetta; anche se in realtà presto mi sono svegliata comunque, visto che alle quattro sono stata svegliata da dolori lancinanti a collo e spalla, perciò dai, almeno un punto della mia lista giornaliera di cose che volevo fare possiamo anche smarcarlo...
Non ho potuto preparare suddetta ricetta, e non ho combinato una cippa, a parte aiutare Keira con i compiti per casa.
Ho finito l'acqua da bere, con il collo e la spalla in queste condizioni di arrivare fino al supermercato non ne parliamo neanche, e non parliamo neanche di bere quella del rubinetto, la trovo piacevole solo quando sono a Trieste, quella di qui non sa neanche di "acqua".
Con il collo così mi fa comodo una sciarpina o star sotto le coperte di pile, ma oggi fa un caldo pazzesco, giuro, è da mare e da costume, e pure da bagno ed io son qui a morir di caldo.
Avevo capito che era venerdì 17 a portare sfiga, non il giorno dopo.
Nessuno mi ha fatto notare che ieri fosse venerdì 17, ma a quanto pare la sfiga se n'è accorta, che mi era passato di mente, ed eccomi qui.

Perciò, tralasciando questo momento esilarante, dove sembro uscita da un romanzo di Victtor Hugo, passiamo a qualcosa di più interessante, prima di tutto vogli dirvi che ieri sera ho mangiato il baccalà alla veneziana e pomorini, che mi ha fatto venir voglia di cucinare il baccalà, perciò preparatevi, poi passiamo alla ricetta e parliamo di qualocsa di più carino magari, una cosina veloce veloce, di quelle che, quando avete ospiti inattesi a cena potete preparare in pochi minuti, anche con gli avanzi di frigo (se poi non dite che sono "avanzi", ma che li avete appena preparati per fare questa focaccia gluten free che vi concedete ogni sera come aperitivo vi sentirete pure gasatissimi, vedendo gli ospiti con espressioni tipo "ammazza come ' so fighi questi, guarda che aperitivo si preparano tutte le sere!".
Un modo intelligente per riciclare con stile gli avanzi via...

Per preparare suddetta ricetta vi serviranno pochi ingredienti:
Un tipo a vostra scelta di verdure arrostite o bollite
Un tipo a vostra scelta di formaggio spalmabile o a pasta filante
Misticanza o verdura e baby

L'aperitivo Gluten Free



Per la base
100 G di farina di ceci
2 cucchiai di olio extra vergine d'oliva
Sale e pepe q.b
Acqua q.b

Unite tutti gli ingredienti tranne l,acqua, che unirete a filo, quanto basta, fino ad ottenere una pastella liscia ed omogenea.
Frullate il tutto con un frullatore ad immersione e lasciate riposare almeno 30 minuti.
Questa simil torta di ceci necessità di pochi minuti di cottura, basterà ungere leggermente una padella e farla dorare da entrambi i lati, quindi disporla sul piatto e farcirla.
Io ho utilizzato barbabietola e saltate in poco olio, con le sue foglioline e vellutata di bufala La Tramontina.

Ma voi potete sbizzarrirvi come volete, immaginate che a pranzo vi siano avanzate delle melanzane grigliate, perfette con parmigiano a scaglie, mozzarella a cubetti ed una dado latta fresca di pomodori.
Le barbabietole, che io vi consiglio caldamente di comprare crude, e non quelle precotte nel banco frigo, poichè il sapore, fidatevi è totalmente diverso, pensate che per quelle fresche io e mia figlia ne andiamo matte, quelle precotte non riusciamo a buttarle giù, comunque, vi dicevo, le barbabietole sono perfette anche con il gorgonzola, magari unite il formaggio sopra la base di ceci quando ancora sta cuocendo in padella, così fonderà.
Rucola, robiola e salmone affumicato come lo vedete?
Peperoni grigliata e provolone, zucchine e mozzarella di bufala...
